My Favorite Websites For Meal Inspiration

Hello, love!

Last week in Portland, we went straight from an ice storm keeping us housebound for seven days into spring-like temperatures in the 60s (that's in the late teens for us Celsius folks). I don't know about you, but the foods I like to eat and my cravings often change with the weather.

With unpredictable weather, searching for an ingredient or meal on any of my tried and trusted websites can be helpful. Read on to find out which one makes me the happiest!

My all-time favorite is the Minimalist Baker. Hands down. And I'll tell you why!

Don't let 'Baker' in the name fool you. This website has sweet and savory meals, from breakfast/lunch/dinner to snacks and desserts.

What I love about MB is the filter section for their recipes. You can filter by meal, ingredient, cuisine, specific diet, and more! I also love that most of their dishes are vegan and/or gluten-free. Again, don't let that put you off if you are not DF or GF! I use eggs and real butter in my cooking, so substitute the 'flax egg' for a real egg or vegan butter for real butter. You can easily swap things out to suit your needs. Every recipe seems to have low or no processed sugar for those looking to reduce sugar intake and still indulge in decadent, nutrient-dense delights!

Remember, it's not about following the next fad diet but finding out what truly works for your unique body.

And the most important thing is that everything is DELICIOUS. So you don't have to eat bland food if you are DF, GF, or SF. Quite the opposite! The next time you have a few minutes, I encourage you to get on there and look around. So. Much. Goodness.

Finally, I'd like to share my favorite go-to soup recipes.

I can't seem to be able to get enough soup. I make a big batch to cook once and eat for 3 to 4 meals, plus pop a quart-size container in the freezer for a quick and easy meal another day.

Red Cabbage Soup - sounds uneventful, but trust me, this is anything but ordinary and the most gorgeous color, especially when you squeeze the lime in.

Super Garlicy Tomato Soup with Smashed White Beans - has an incredible depth of flavor.

Chicken Pot Pie Soup - comfort food that is GF & DF.

10-Spice Vegetable Soup - a crowd-pleaser.
